Instant tea and coffee differ from the ordinary one by the method of preparation and tastes. They can be prepared either by spray drying or by freeze-drying. In each case the drying process are preceded by extraction and then concentration of the liquor. Most spray-dried products are produced from thermally concentrate extracts.
Instant coffee is just regularly brewed coffee with nearly all the water removed. It is still a pure coffee. The freeze-drying method, the coffee is allowed to sit to evaporate naturally for a concentrated solution. The concentration is than frozen to around -40° celsius. The remaining water freezes into ice crystals. In spray-drying methods the water is allowed to evaporate to form a concentration and after that it is sprayed from a high tower in a large hot air chamber. As the droplets fall, the remaining water evaporates. The instant coffee is tasty and preserves the most coffee flavour.
